Strawberry Rhubarb Crisp

Ingredients

Fruit Layer
  • 3 c strawberries (sliced)
  • 3 c rhubarb (sliced crosswise)
  • 1 c sugar
  • 3 T all-purpose flour
  • Topping
  • 1.5 c all-purpose flour
  • 1 c packed brown sugar
  • 1.5 c rolled oats
  • 1.25 c butter
  • Directions

    1. Preheat oven to 375 F.
    2. Mix Fruit Layer ingredients (strawberries, rhubarb, sugar and flour) together in a large bowl.
    3. Pour the mixture into a 9X13 baking dish.
    4. Mix Topping ingredients (flour, brown sugar, oats and butter) in a bowl until crumbly.
    5. Sprinkle Topping on Fruit Layer.
    6. Bake until crispy on top (about 45 minutes).
    7. Serve warm with vanilla ice cream.
